The best coffee roasters in California range from Bay Area light-roast pioneers to award-winning espresso specialists in Southern California, and most of them roast to order and ship fresh beans anywhere in the US. Verve, the Santa Cruz roaster many people know first, is already covered in our guide to the best coffee roasters in the USA, so this list goes deeper into seven independent roasters across the state. We compared roaster details, expert reviews and owner feedback, and for each one we name a signature coffee to try first.

1. Sightglass Coffee — Best organic espresso blend

Brothers Jerad and Justin Morrison started Sightglass as a coffee cart in 2009 and opened its roastery café in San Francisco’s SoMa district in 2010. Both founders stepped down in 2024, when former Starbucks executive Sharon Healy became CEO, but the company remains independent. Most of what Sightglass roasts today is certified organic.

Owl’s Howl is the coffee to start with. It’s a medium-roast organic espresso blend of washed coffees from Central America and East Africa, and Sightglass lists notes of cacao nib, stone fruit and candied orange peel. Coffee Review scored it 91 in June 2025. Sightglass roasts to order Monday through Friday, ships within the US (including military addresses) by UPS or USPS, and offers every grind from whole bean to espresso. Subscribers save 15% and can set any delivery interval.

Visit if you’re in town: the original roastery café on 7th Street in SoMa is the one to see, with another café in the Mission.

Why we picked it: Owl’s Howl is an easy-drinking, organic espresso that also works as a rich drip coffee, and the subscription is flexible.

Keep in mind: Ground shipping can take four to eight business days, so East Coast buyers may want to pay for faster delivery.

What owners say: We found too little recent public owner feedback to summarize fairly.

2. Ritual Coffee Roasters — Best for light-roast single origins

Ritual opened on Valencia Street in the Mission in 2005, and the crowds it drew are often cited as an early sign of San Francisco’s third-wave coffee scene. It started out serving Stumptown beans before roasting its own. Since 2007 Ritual has bought directly from farmers it knows, and it says it pays two to three times the commodity price for specialty coffee.

Ritual roasts most of its coffees light, with its espresso blends roasted to medium. Sweet Tooth Espresso is its flagship; the current version is a Central American coffee with notes of stone fruit, nut brittle and cacao nibs. Ritual roasts to order Sunday through Thursday, ships by UPS anywhere in the US and abroad, and sends whole beans only. Subscriptions ship free.

Visit if you’re in town: the original café on Valencia Street between 21st and 22nd, or the Hayes Valley location.

Why we picked it: Ritual is one of the roasters that defined the Bay Area’s light-roast style, and its direct-trade program has run for nearly two decades.

Keep in mind: It doesn’t grind, so you’ll need a grinder at home, and fans of dark roasts should stick to the espresso blends.

What owners say: We found too little recent public owner feedback to summarize fairly.

3. Equator Coffees — Best for mission-driven sourcing

Helen Russell and Brooke McDonnell founded Equator in a Marin County garage in 1995, and it has roasted on Jordan Street in San Rafael since 2003. In 2011 it became California’s first B Corp coffee roaster. Roast Magazine named it Macro Roaster of the Year in 2010, and the SBA named it National Small Business of the Year in 2016. Equator trades directly with more than 50 producers in about 20 countries.

Tigerwalk Espresso, a medium-roast blend of Colombian, Kenyan and natural-process Ethiopian coffees, is a good first bag. Equator lists notes of cherry, key lime and dark chocolate. It roasts to order on weekdays, ships within the US in one to two business days, and offers five grind options plus whole bean. Subscriptions run anywhere from weekly to every eight weeks.

Visit if you’re in town: Equator has about a dozen cafés, mostly around the Bay Area. Try the Fort Mason café on San Francisco’s waterfront or the one in Mill Valley.

Why we picked it: Equator pairs decades of roasting experience with strong ethical credentials, and its range runs from bright single origins to a French roast.

Keep in mind: Small orders below its free-shipping threshold pay shipping, so subscriptions or bigger orders are better value.

What owners say: We found too little recent public owner feedback to summarize fairly.

4. Temple Coffee Roasters — Best Sacramento roaster

Barista Sean Kohmescher founded Temple in Sacramento in 2005. Its Farm to Cup model is built on long-term relationships with growers, and Temple says it pays well above Fair Trade prices. Rather than one house style, each coffee gets its own roast profile.

The Three Pillars Blend combines coffees from Honduras, Guatemala’s Antigua region and Colombia, and Temple describes dark chocolate, caramel and citrus. An earlier version of the blend earned a 92 from Coffee Review. Temple roasts to order and ships within 24 hours on weekdays by USPS Priority or UPS Ground to the continental US, military addresses and many countries.

Visit if you’re in town: Temple runs nine cafés, including spots on K Street and 16th Street in Sacramento and one in Davis.

Why we picked it: Temple is the standout roaster in California’s capital, and its fast roast-and-ship schedule keeps mail orders fresh.

Keep in mind: Three Pillars can sell out, and its components change with the harvest, so check the current notes before ordering.

What owners say: We found too little recent public owner feedback to summarize fairly.

5. Bird Rock Coffee Roasters — Best for award-winning San Diego coffee

Chuck Patton started roasting in his garage and founded Bird Rock in 2002, opening its first café in La Jolla in 2006. Roast Magazine named it Micro Roaster of the Year in 2012. It has also won five Good Food Awards, and more than 100 of its coffees have scored 90 or higher at Coffee Review.

Monkey Bite Espresso blends African and South American coffees, and Bird Rock lists brown sugar, dried apricot and butterscotch. Online orders are roasted and shipped every Tuesday. You can pick whole bean or a grind matched to your brewer, from espresso and V60 to Chemex, French press and cold brew. Bird Rock runs two subscriptions, Safe For Work and The Cupping Table, and its coffee is also sold through the Trade subscription service.

Visit if you’re in town: the original café is at 5627 La Jolla Boulevard in the Bird Rock neighborhood.

Why we picked it: Few roasters anywhere have Bird Rock’s run of high Coffee Review scores, and its brew-specific grind options help if you don’t own a grinder.

Keep in mind: Because it roasts online orders once a week, your bag may wait a few days before it ships.

What owners say: We found too little recent public owner feedback to summarize fairly.

6. Klatch Coffee — Best for championship espresso

The Perry family opened Klatch, originally called Coffee Klatch, in Rancho Cucamonga in 1993. CEO Heather Perry won the US Barista Championship in 2003 and 2007, and Klatch took a “World’s Best Espresso” award at the 2007 World Barista Championship in Tokyo. It was also the overall champion at the Golden Bean competition from 2015 to 2018.

Belle Espresso is its best-known coffee: a medium-dark, natural-process blend with notes of blackberry, chocolate and brandy, plus hints of orange and spice. It sells whole bean only. Klatch roasts after you order, processes orders in two to three business days, ships throughout the US and internationally, and its coffee clubs always ship free.

Visit if you’re in town: Klatch has a dozen cafés in Southern California, including Rancho Cucamonga and Redondo Beach.

Why we picked it: If you love sweet, fruity espresso with a little more roast, Belle has a long competition pedigree behind it.

Keep in mind: Belle is darker than most picks here, and it isn’t sold pre-ground.

What owners say: Café visitors mostly praise the drinks and friendly staff, though a few mention slow service at busy times.

7. Cat & Cloud Coffee — Best for milk drinks

Jared Truby, Chris Baca and Charles Jack, all veterans of barista competitions, founded Cat & Cloud in Santa Cruz in 2015 and opened their first café in 2016 after a Kickstarter campaign. In 2022 Food & Wine named it the best coffee roaster in California.

The Answer is its house blend of washed and natural coffees from Central America and Africa, roasted for balance. Cat & Cloud describes fruit, chocolate and caramel, with caramel and butterscotch coming forward in milk. You can order whole bean or ground for drip, French press or espresso, and the Roaster’s Choice subscription sends a rotating coffee. Food & Wine reported that it ships every weekday.

Visit if you’re in town: the original café is on Portola Drive, and there’s a downtown spot in Abbott Square on Front Street.

Why we picked it: The Answer is a crowd-pleaser that tastes good black and even better in a latte or cappuccino.

Keep in mind: Bags are 10 oz rather than 12 oz, so compare price by weight.

What owners say: We found too little recent public owner feedback to summarize fairly.

How to choose a California coffee roaster

A little California coffee history

California has shaped American coffee for decades. Alfred Peet opened his first shop in Berkeley in 1966, and in 1971 he trained the founders of Starbucks and supplied their beans for its first couple of years. A generation later, cafés like Ritual helped launch the Bay Area’s third wave, and Roast Magazine’s Roaster of the Year awards have gone to California roasters including Equator, Bird Rock and Costa Mesa’s Portola Coffee Roasters.

Pick a roast level you’ll enjoy

Northern California roasters such as Ritual lean light, which brings out fruity, floral and tea-like flavors. Sightglass’s Owl’s Howl and Equator’s Tigerwalk sit around medium, while Klatch’s Belle is medium-dark. If you usually drink dark-roast supermarket coffee, start with a medium blend or an espresso blend, which tend to have more chocolate and caramel.

Check the roasting and shipping schedule

Every roaster here roasts to order, but the timing differs. Temple ships within 24 hours on weekdays, Equator within one to two business days, Ritual the day after roasting, and Bird Rock roasts online orders once a week. Ground shipping from California to the East Coast can take most of a week, which is fine: freshly roasted beans usually need a few days to rest anyway, and espresso often tastes best a week or more after roasting.

Whole bean or ground?

Whole beans stay fresh much longer than ground coffee. Ritual and Klatch’s Belle are whole bean only, while Sightglass, Equator, Bird Rock and Cat & Cloud will grind for you. Match the grind to your brewer: fine for espresso, medium for drip and pour-over, and coarse for French press and cold brew.

Store beans properly

The National Coffee Association recommends keeping beans in an airtight, opaque container in a cool, dark place, buying one to two weeks’ worth at a time, and grinding just before brewing. Skip the fridge, which adds moisture and odors.
